As a countdown to the Dallas Observer's "Best of Dallas" 2010, City of Ate is serving up 100 of the favorite dishes we crave, savor and hope to scarf down again soon. These dishes are in no particular order. Some are little known, others celebrated. Some are pricey, others can be eaten on the cheap, but all are delicious to the extreme. Spaghetti Bolognese at Urbano Café
Sure, the pea-soup thick days of 100+ degree temperatures are neigh. But that shouldn't prevent you from trying the bantam storefront restaurant's signature dish, spaghetti Bolognese.
The waitress will tell you it is far better suited to chilly days, but that line of logic should be no obstacle. The house specialty is what one should request. The spaghetti, under a sweet meat sauce flecked with celery, carrots and Parmesan, is the most skillfully cooked spaghetti Bolognese this side of Manhattan's Little Italy.
Urbano Cafe owners Mitch and Kristen Kauffman should also be lauded for not serving the toothsome pasta drowning in sauce, something many Americans perceive as the main ingredient in a pasta dish. It's the other way around, mi amici. Once it cools a bit, the spaghetti Bolognese, a combination of Neapolitan pasta and central Italian sauce, is a unified dish of satisfaction, deserving of your order no matter the weather.
