The Snookie's on Keller Springs Road bid adieu earlier this month and is making way for a new Liberty Burger. Actually, this is a case of Dace Street, co-founder of Snookie's, passing the torch to his little sister, Mariel Street (they're children of local restaurateur Gene Street).
The first Liberty Burger opened at Forest and Inwood in 2011 and has consistently received good reviews. With this concept, Mariel wanted to create an upscale burger with high-quality ingredients, like a patty made from a mix of tenderloin, chuck and brisket; and fresh baked local bread.
If the city plays nice with the permit process, Mariel expects the new spot to open in mid to late August.
With this second location, she's going more full-service. The menu will be the same as the other locations, but will have a slightly different service model.
"It will be full-service instead of fast casual," Street said. "There will be a wait staff and about 40 more seats than Forest Lane. We will also be taking to-go orders over the phone, which we currently do not do at Forest Lane."
In addition to beer and wine, the new spot will have a seasonal specialty cocktail list. Street reports that they will have a "syrup-free" bar where they'll only use fresh juices, house-made simple syrup and sweet and sour, in addition to their own infusions.
