Welcome to "You Like This," in which we ask chefs two questions: 1) What's the best-selling dish at your restaurant? and 2) What's your favorite dish at your restaurant? We hope the answer to the first question will open your eyes to the fan favorites and the Dallas palate, and that perhaps the answer to that second question will inspire you to go out on a kickass food limb once in a while. This week's You Like This features chef Brian C. Luscher from Luscher's Red Hots.

Hey chef! What's the best-selling dish at Luscher's?


The best selling dish at Luscher's Red Hots is actually a tie. The number one selling item is our signature item and our tribute to the classic Chicago dog: The Post Oak Red Hot. Pork and beef smoked frank on a pain au lait poppyseed bun with piccalilli, white onions, Lemley’s tomatoes, pickled sport pepper and spicy brown mustard.

Neck and neck with that, which was a semi-second thought when putting together the original menu, is the media frenzy-inducing Uncle Herky Burger. It's two Local Yocal wagyu patties, American cheese, “prepared” mustard, fresh mayo, grilled onions, horseradish and pickle on a seeded bun.

What's your favorite item at the restaurant right now?

My favorite item is, and probably always will be, The Combo (Wet. Hot.). It's our “eye-talian” beef sandwich with sweet ‘n’ hot Italian sausage. But, the B.O.B. makes me very happy: Vital Farms egg, Luscher Country Breakfast Sausage, American cheese and Texas Pete Hot Sauce on a toasted, seeded bun. Money.

Don't sleep on the Greektown Gyro. I really think we've got this dialed in. The texture has got just the right bite. The flavor of the meat has the right balance of beef and lamb and garlic. Plop some cucumber-mint yogurt sauce (our version of tzatziki) on it and you've got a slam dunk wrapped in a home run.

Also, The Meat Fight sausage is pretty damned special, if I do say so myself.
I have loved Luscher's since the day I had a Post Oak Red Hot at the White Rock farmer's market. My husband has the daily specials at Luscher's memorized and has quite possibly eaten more meals there than Luscher himself. So, me telling you that the hot dog and hamburger and the everything there is amazing isn't really fair and balanced and unbiased. You're gonna have to go there and try it your dang self. And when you go, try something new. He's not wrong about that gyro. Get over to Luscher's. I promise, you like this.
