100 Favorite Dishes: Bruschetta at Bolsa

To celebrate Dallas Observer's "Best of Dallas" 2010, available this week, City of Ate is serving up 100 of the favorite dishes we crave, savor and hope to scarf down again soon. These dishes are in no particular order. Some are little known, others celebrated. Some are pricey, others can be eaten on the cheap, but all are delicious to the extreme. No. 3: Bruschetta at Bolsa

You can order these tasty bites singularly or all four at once, which is what we did and highly recommend. The lightly grilled bread includes a power-punch of flavor. The first bruschetta we tried included Texas tomatoes (Bolsa is famed for using the freshest local ingredients) along with Dallas goat cheese and basil. The flavors offer a melt-in-your-mouth savoriness that is difficult to beat.

The second bruschetta is a smear of fig preserves with proscuitto. We also enjoyed the smoked salmon, red pickled onion, creme fraiche and caper version for a more familiar melange of flavors.

The final version of Bolsa's bruschetta includes Fuji apples, p'tit basque (a french fresh sheep's milk cheese), olive oil and toasted pine nuts to round up the perfect dish for a cool fall treat to be ordered as a starter, or even perhaps a full meal.
