As a countdown to the Dallas Observer's "Best of Dallas" 2010, City of Ate is serving up 100 of the favorite dishes we crave, savor and hope to scarf down again soon. These dishes are in no particular order. Some are little known, others celebrated. Some are pricey, others can be eaten on the cheap, but all are delicious to the extreme. No. 21: Cachapa at Zaguan Latin Cafe & Bakery
We could make an entire lunch out of the free samples of Latin American-style pastries and bread stacked on the counter at this Uptown cafe/bakery/coffee shop. But snarfing up a free lunch -- tempting as it is -- is kind of cheap and cheesy, which coincidentally describes our favorite dish at Zaguan: the ham and cheese cachapa. Thin-sliced, salty ham and a gooey pile of melted white farmers cheese is tucked into a folded, sweet corn turnover and lightly browned on a grill, then served with an order of crispy plantain chips. You can fill the turnover, whose outside is made with a thick, fluffy cross between a corn tortilla and a pancake, with your choice of ingredients. The beef and pork a both delicious, but give us the ham and cheese, which hits all of our three major food groups: the sweet, the salty and the cheese.
