Who cares if they aren't fritters, they're freaking deep fried aren't they? Jon Steven's Brussels sprouts at SNACK are an affront to Moms everywhere who swore the baby cabbages were too good for you not to serve, but impossible to make taste any better.
Stevens neatly trims the sprouts before blanching and shocking them in ice water to keep them Irish green. A simple beer batter wraps the leafy bulbs in a salty, crunchy coating that's more addictive than kettle cooked potato chips with French onion dip.
You need dip? You're covered. The caper and pine-nut mayo doesn't hurt things either.
