There's a perception that there's no ramen to be had in Dallas, and it's wrong. You can get a bowl in Richardson at Sapporo Ramen & Sushi or at Shushiism in Carrollton. Those bowls are fine, but Tei-An's is so much better it makes the the others seem like a waste of time.
The broth is a perfect savory soup based on pork bones that's adorned with seaweed, green onions and bamboo shoots. Each is carefully added to the bowl so it looks as good as it tastes. And a serving or ramen at Tei-An is $9.95, only $2 more than the suburban bowls.
Chef Teiichi Sakurai should offer more varieties. Or even a secret ramen stall at the back of his restaurant. Or better yet just open a ramen house. The soup is taking off in popularity all over the country. Dallas is ready.
