There are many tortillerias in Dallas, but few of them make tortillas as good as La Nueva Fresh and Hot. And many tortillerias serve tacos around town, but they're seldom this delicious. The Webb Chapel road tortilla factory and take-out is one of Dallas' best taquerias, even if eating there is not without challenges.
First there's the heat, which at the height of summer can be stifling. It grabs you when you walk in the door and squeezes, and it's only worse when the massive twittering tortilla machine is processing masa. It's a wonder the employees can tolerate working there. And yet they're there every day, doling out bags of tortillas by weight to a steady stream of customers who take them home and do delicious, untold things with them.

The tortillas are soft and pliable with a pillowy consistency that's rare in corn tortillas. They're light, almost ethereal and perfect when stuffed with a hearty guisado verde stew. Don't worry about the lack of seating: Your taco will disappear long before your feet get tired while you eat off the trunk of your car. And don't forget some chips and salsa for the road. They're both made in-house and the latter comes in several varieties. Say goodbye to Tostitos and grocery-store salsa. You don't need them any longer.
