It's almost arrived. After months of anticipation, your artery walls will finally get to celebrate Texas Chicken Fried Steak Day tomorrow.

Norma's Cafe is getting in on the action. If you eat there tomorrow, you'll be entered into a drawing to win free chicken fried steak for a year, which will definitely kill you.

Ed Murph, the owner of Norma's, thought up the contest. He grew up in Oak Cliff and bought the restaurant 25 years ago. He says he "couldn't pass up a good thing." Norma's has been open 55 years.

"We use an inside round because of the consistency and flavor," Murph told me. The man likes his CFS with a little bit of chew. I do too.

Norma's double batters the meat. From a buttermilk to breading, back into buttermilk and then breading again, all before they toss the whole thing in the deep frier. A little country gravy and your choice of side and the plate comes to your table. I prefer mashed potatoes. The mac and cheese is good too.

Murph lives in North Dallas now, and helped champion the effort to make the holiday a reality. "It's been around a long time and needs to be honored," he said. Mayor Mike agrees. He signed a city proclamation so that Dallas could have its own Chicken Fried Steak Day. So be a good citizen. Go eat some.
