The result is a new book called Unseen America, which Cohen will sign 7 p.m. Thursday at Borders West Village, 3600 McKinney Ave. As one program participant said, “A lot of people assume you are what your job is, taking out garbage and fixing plumbing. They don’t realize that there’s an artful soul to everybody.”
