I was surprised it took me so long to find these, considering they’re offered just up the street at Oak Lawn Coffee. Croissants are hard business, taking many turns (the folding of butter into dough to form layers) at just the right temperature, and baking just so so those stratifications become airy layers of perfectly cooked pastry.

Rush Patisserie nails the perfect croissant on all counts. It’s light and airy, tastes of rich butter and is cooked aggressively to a deep mahogany brown. What’s better is you can get them a number of places. Try the original location in Oak Cliff if you want to meet Samantha Rush, the woman behind Dallas’ best croissants, or Drip Coffee on Lovers Lane near the tollway.
