Folks up north get to have snow during the holidays, and they won’t let you forget about it either. Fine. Down here we get the Latin American tradition of holiday tamales, and stockings stuffed with tinfoil wrapped tamales is a fair consolation prize for when you can’t build a snowman in your front yard. And luckily for you, Central Market is offering a one-day class in which you learn the step-by-step process of tamale creation. From beginning to end, masa to filling, the class will instruct on both sweet and savory versions of the cornhusk wrapped treat. It’s $50 to attend, but can you really put a price on knowledge? And the best part is, once you know how to do it, you can put whatever you want in the masa. Did someone say bacon tamales? The class begins at 1 p.m. Sunday.
