Kor-BQ, the Dallas area’s first purveyor of Korean-Mexican fusion tacos, has added quesadillas, or in this case, kuesadillas, to its menu. The little strip mall shop in Plano has weathered business troubles superbly and now has a dedicated, almost apostolic, following. Perseverance and proximity to cities with high concentrations of Asian businesses and populations have much to do with their success.
The new item is a move away from the Mexican-inspired food. The quesadilla Kor-BQ offers is the Tex-Mex version (a filling between two tortillas), not the half-moon shaped traditional quesadilla. The quesadillas, sorry, kuesadillas, are composed of two flour tortillas filled with any of Kor-BQ’s meats: galbi, bulgogi, spicy pork and spicy chicken. They also come with lettuce slaw, sour cream and salsa. Park and company have also given diners a sweeter option, a dessert kuesdilla with ripe bananas in a sweet and “kreamy” cream cheese sauce, then dusted with cinnamon and powdered sugar.
“We started small with our menu to get things right and we were always trying to expand our menu, so this is a part of that expansion,” said co-owner Erik Park. Customers can also expand the flavor of the savory kuesdillas, said Park. “Add the sautéed kimchi to give it a deeper Asian flavor,” further fusing East and West.
