The Green Room, the Deep Ellum legend that’s back in business as of this afternoon, has put quail eggs and halibut cheeks on its elegant opening menu.

According to a press release, executive chef Joel Harloff’s menu features “modern American cuisine with European influences that will change regularly, not just seasonally.”

The appetizer portion of the menu includes scallops, mussels, grilled quail, spinach salad and a steak tartare served with hard-boiled quail eggs and pumpernickel bread. Entrees, priced from $19-$31, include pan-seared salmon, braised lamb shank, a grilled New York strip steak and a “duo of pan-roasted skate wing and halibut cheeks.”

But it’s unlikely The Green Room’s most ardent fans will ever order many of the announced dishes, since the “Feed Me” option’s back: For $47 — or $68 with wine — guests get “a unique four-course menu” created specifically for the table.
