To prepare for this fall’s Best of Dallas® 2014 issue, we’re counting down (in no particular order) our 100 Favorite Dishes. If there’s a dish you think we need to try, leave it in the comments, or email me.

When you walk into Qariah, you’ll see a number of shawarma spits spinning with chicken and lamb and other meatsicles. It’s a seductive image and the shawarma is good, for sure. It’s not as good as the Shish Tawook, though, which has the added advantage of some intimate time just about searing, spitting charcoal. If you’re looking for a good sandwich, don’t miss it.

The hunks of chicken are marinated in yogurt and spices before they’re threaded on a skewer, rested over hot coals, turned and turned again. And if the kitchen stopped there they’d have a solid grilled chicken plate, but instead they grabbed a piece of locally baked bread, and made the whole thing portable.

A light swipe of the most garlicky of purées, and then some tomatoes and some pickled vegetables contribute to one of the best sandwiches to be had along Greenville Avenue. And there’s more of that garlic purée served on the side, if you’re inclined, but watch out because it packs a punch. No close talking for the rest of the day, please.
