And now the real reason I went to The Porch comes to the surface: I’d heard good things about the smoked ham mac and cheese casserole.
Dallas is without a doubt a mac and cheese-obsessed town, consuming enough of the gooey substance to warrant its very own slide show. The problem is, a lot of it’s bad.
Many renditions are soupy, with noodles swimming in a thin sauce, devoid of character. Others are woefully dry. The Porch’s version is perfect: a thick blend of cheese supporting well-cooked noodles accented with cubes of soft smoked ham.
