No. 50: Enchiladas Suizas with Off-The-Menu Salsa at Veracruz Café

Switzerland. The land of sinful chocolate, top-secret bank accounts and yodeling. Most people are unaware that this land-locked European nation made a substantial contribution to Mexican cuisine when Swiss immigrants imported their native dairy cows, thus introducing new forms of cream and cheese into the country. Suiza means Swiss, and at Veracruz Café, tender marinated chicken is stuffed into dressy blue enchiladas, then covered with Huasteca red sauce, queso fundido, and cream sauce. Sumptuous, flavorful and a bit mild. Merely add a dollop or two of creamy fire in the form of Veracruz’s off-the-menu salsa (a heavenly blend of chipotle, jalapeno, ground pepper, and — yes — mayonnaise), and you’ll have a brunch as classy as the restaurant’s artwork, and every bit as spicy.
