The Only Thing to Fear is Fearing Himself

As we mentioned a couple days back, Hannah’s stormed AT&T Plaza for CBS’ The Early Show, and, man, does WFAA-Channel 8’s HQ ever look good on KTVT-Channel 11. (I can almost hear Justin Farmer now, shouting through the glass, “Kelly Rowland! Say my name!”) Among the guests this a.m. was chef Dean Fearing, whose new digs open in the Ritz-Carlton August 15. Fearing prepped Braised Beef Short-Rib on Flour Tortillas with Mango-Pickled Red Onion Salad, the recipe for which is available here — along with a profile of Fearing, who says of his decision to leave The Mansion on Turtle Creek for his own joint, “I thought, ‘Gosh, I’m 51. I could retire. Do I really want to venture out and do something that I think is the next step for modern dining?’ I do. And that is to get away from fine dining to a come-as-you-are approach, but still serving on bone china, fine wine glasses and silver from Germany, doing it without tablecloths and doing it on placemats.” Lost me.

For these on-the-road segments, CBS is partnering with Food & Wine magazine, which has actually provided a decent little cheat sheet about Dallas dining. Deep Ellum actually tops the list with Local; also on the queue is Fearing’s, which, uh, isn’t open yet?
