Spring in Dallas means storm season, hookup season and strawberry season. Paul Martin’s American Grill mixed up their own perfect storm with this pick from their new cocktail menu, the Corralejo Strawberry Splash. Using 100 percent blue agave tequila and fresh, muddled strawberries, this bright, fruity cocktail is a perfectly refreshing patio cocktail.
If you can’t make it to Paul Martin’s American Grill to try the Corralejo Strawberry Splash, muddle through this recipe at home:
Corralejo Strawberry Splash
2 oz. Strawberry-infused Corralejo Blanco tequila*
1/2 oz. Cointreau
1 oz. simple syrup
1/2 oz. lemon juice
1 fresh strawberry garnishAdd liquid ingredients to a cocktail shaker and shake until well mixed and chilled. Strain into a rocks glass over fresh ice. Garnish with a full strawberry on a bamboo toothpick.
*Strawberry-infused Corralejo Blanco tequila
750 mL bottle of Corralejo Blanco Tequila
One quart fresh strawberriesChop strawberries coarsely, place in a mason jar and muddle lightly. Add tequila, seal and let stand for at least one and a half weeks or up to three, tasting progressively. Once the taste is right, strain out the strawberry remnants with a sieve or cheesecloth.
