For years after my mom shared her late mother’s so-called “Caesar” salad dressing recipe, I didn’t even let my wife read it. According to family legend, my grandmother sweet-talked the chef at a St. Louis restaurant out of the secret recipe. The restaurant was subsequently destroyed by fire, a fate more befitting of a joint that serves bottled dressing. Later, I learned our “Caesar” is actually Mayfair dressing, a creamier, less tangy cousin of Caesar.

Ten chefs who know the difference will pit their creations against each other in the XVI Caesar Salad Competition Sunday at the Adam’s Mark Hotel, 400 N. Olive St. Tickets for wine, food and voting privileges are $50 in advance and $60 at the door for American Institute of Wine & Food members, $60 and $70 for others. Tables for 10 are $450.
