To prepare for this fall’s Best of Dallas® 2012 issue, we’re counting down (in no particular order) our 100 Favorite Dishes. If there’s a dish you think we need to try, leave it in the comments, or email me.

Bijoux’s new menu makes for interesting exploration because most of the entrees are offered in modestly priced half portions. You can order a full plate of veal cheeks if you like, but a half comes with two braised cuts (a whole cow’s worth), which is really plenty when a dish is as heavy as this.

Cheeks are fatty, with plenty of collagen that imparts a viscous glassy quality to their braising liquids. Who care’s if this dish is woefully out of place on a summer menu, 100 Favorites will be over by September and this is a great plate. Put it in your back pocket and make sure to order these cheeks this fall.
