I was worried I wouldn’t be able to include this dish in our 100 Favorites list since Michael Ehlert, the chef responsible for the plate, recently flew the coop. I just called The Chesterfield, though, and the devils on horseback remain on the menu.
Don’t order these alone; you’ll miss the whole point. Ask the bartender to mix you up an Old Fashioned while you wait on your bacon-wrapped, cheese-stuffed dates. The ash and oak in the bourbon featured in your cocktail will draw out the smoky flavors in the bacon while the sweetness of dates and the tang of blue cheese finish the flavor profile that makes the most compelling food and cocktail pairing I’ve had since coming to Dallas.
