Summer is coming to an end. The kids are going back to school, half-day Fridays are almost over and yet it’s still hot AF in Dallas. Trick Pony, Harlowe MXM’s cocktail bar, wants to keep the spirit of the season going for you through January with their Endless Summer menu. Expect “plenty of tiki-inspired direction, with a focus on tropical flavors and bold garnishes,” according to Harlowe MXM’s management.

One of our favorite cocktails on the menu features dill, a less expected cocktail ingredient. The What’s the Dill Yo? brings together the savory elements and slight bitterness of dill with strawberry and citrus. And since this is Texas, they throw in some habanero bitters to spice it up.

Throw on your wet suit, drag along your surfboard and enjoy Trick Pony’s current theme, Endless Summer, sooner than later. It’ll be over before you know it.

What’s the Dill Yo? ($11): gin, strawberry, citrus, herbs and habanero bitters
