We are left to survive until spring on pecans, Texas citrus, the occasional greens–and sweet potatoes.” (Kim Pierce in yesterday’s Dallas Morning News, sorta bringing up in her lead paragraph something I’ve pondered from time to time: if we were left to fend on local, seasonal ingredients, would city’s like Dallas or Phoenix exist at their current population levels? What would happen to the average lifespan of those living here? How much canning would be involved?)
