It’s Wednesday evening–still almost afternoon–and it’s cold, but the line snakes out the door almost to the street anyway. It will still be there when you’ve finished eating. Inside, the place, though just remodeled, still has the bustling, noisy atmosphere, kitschy murals, and plastic plants of original Tex-Mex palaces. It’s enchilada night at El Fenix on Northwest Highway and Hillcrest, and it’s an event every week, with a good percentage of Park Cities residents–(Mary Kay Ash was leaving as we entered)–lining up for a real meal deal: two cheese enchiladas, rice, and refried beans (no substitutions), the quintessential Tex-Mex meal, for only $3.75.
