This being prime holiday time, we’re seeing cinnamon in quite a few things on menus, from tipples to treats. It’s having a moment in the health food arena – but mostly, it makes our drinks a little more festive.
Cassia, or Chinese cinnamon, is the fragrant bark of the Cinnamomum cassia plant that’s commonly used here in the States. Our favorite cocktail cave, Midnight Rambler, put it to use in one of the cocktails in its holiday lineup of 12 merry mixes to get you into the spirit(s). Look for the Nutcracker Flail, a bourbon-based cocktail with all the best holiday things: brown butter, two kinds of nuts – pecans and almonds – cinnamon and cayenne pepper. The bold flavors are brought together in this surprisingly bright cocktail to delight the taste buds and shock them into a holi-daze.
