We’ve often written about the latest iteration of The Flying Tomato in Denton, and now it has a new home closer to Dallas.

If you’re at the right places, Old Town Lewisville is a great place to spend a day. We love The Perc Coffeehouse, a moody vintage coffee shop. Just across from it, Jalisco Restaurante serves up a big plate of chilaquiles any time of day. Not into that? Old Town Wine House might be your spot, a sleek conversation spot with fine wines.

But that’s the thing about Old Town Lewisville, these places are all closed by 10 p.m. For years, nightlife in the area has been virtually nonexistent, which is exactly what Buffalo Hirsch owner John Williams is looking to change.

An Open Air Space

Editor's Picks

The Dentonite and restaurateur finished remodeling a massive 35,000-square-foot complex right at the edge of Old Town Lewisville. The space, with its huge courtyard and two adjacent buildings, was previously owned the Salvation Army. When the charity moved, the city bought it and took business pitches from entrepreneurs across North Texas.

The city chose Williams’ idea, which transformed the buildings into two aesthetically unique bars. He added seating and a big TV screen in the courtyard, and space for a few permanent food trucks.

It’s not decorated yet, but Buffalo Hirsch’s massive courtyard will be ripe for gamedays.

Altogether, Buffalo Hirsch was born, with Williams collaborating with his managing partners from Denton staples, Miss Angeline’s, Dan’s Silverleaf and Oak Street Draft House.

The two separate bars present quite differently. The first, which comes up on your right, is a rustic cocktail bar that will be available for rent. The second looks more like a traditional neighborhood bar, save for an outdoor walk-up window and an enormous wall of beer and cocktails on tap.

That’s right. Many of Buffalo Hirsch’s cocktails are available immediately on tap, including fruity options like a watermelon jalapeno margarita, a Mai Tai, or a hibiscus mule.

The food trucks at Buffalo Hirsch offer a taste of Denton: The Pickled Carrot has Vietnamese fare; The Tomato Pizza offers Chicago-style pies or slices (think the Flying Tomato near UNT); And Feta’s Lone Star Greek, typically set up outside of Oak Street in Denton, offers one of the best lamb gyros money can buy.

Buffalo Hirsch will have three permanent food trucks, plus a potential rotating fourth.
