Back in January Tre Wilcox, the Top Chef star who cooked at the Village Marquee, announced his departure from the restaurant. Wilcox stayed on till the end of the month in an attempt to ease the transition during which sous chef Oliver Sitrin bolted to join the Blind Butcher team.
Meanwhile, Andre Natera has been working with his staff to put together a new menu for the restaurant, which was just released yesterday.
“Highland Park is my muse,” says Natera, who claims his menu is his personal attempt to evoke the Dallas dining scene. To that end there’s a raw tuna crudo served with sweet ponzu dressing and jalapeño, fried calamari, a $46 boneless rib-eye and other grilled meat.
The menu has been updated, but not too much. Wilcox’s popular duck-filled spring rolls remain.
