Chris Pyun, former executive chef of the defunct Jeroboam, is back in Dallas filling the executive chef post at the Dallas Central Market, which was vacated by Jamie Samford when he decamped for a slot as corporate chef and product development manager for Winn Meat Company in July. Pyun, the opening chef for the recently bankrupt Green Room in Deep Ellum, left Jeroboam last September to mount the executive chef post at Hi Life Kitchen & Cocktails, a restaurant he founded in Atlanta in 1997 (more in this week’s Hash Over). –Mark Stuertz
