The sizzle is real — Dallas is officially on the global steak map. The World's Best Steak Restaurants has unveiled its prestigious 2025 list of the World’s 101 Best Steak Restaurants, and two Dallas steakhouses have carved out a place among some heavy hitters.
There's much to speculate about a publication named "World's Best Steak Restaurants," so we had to do some digging to find out the legitimacy of its rankings. Anyone can put together a list like this nowadays, and this was our first time ever hearing about this publication.
Upper Cut Media House, a boutique media company out of London, oversees and publishes the list, while 2-4 steak ambassadors "with a broad industry background over decades (awarded chefs, certified meat and Wagyu masters, food journalists etc.) are evaluating for us on every continent," according to the World's Best Steaks website.
Their goal is to be and remain the leading publication for steak restaurants around the world. The website states all of its rankings are based on quality, in every aspect and nine criteria evaluated by the steak ambassadors.
First is the quality of meat offered, considering taste, terroir, character, marbling, cut and preparation. Next is the selection and variety of meat cuts. Third is service quality and their expertise with the meat, noting that in-depth product knowledge is essential.
Detailed descriptions of the meat cuts on the menu are also a requirement, with details down to the gender of the cow and the age it was slaughtered.
Further down the list, it gets a bit sticky with requirements like "ease of use and efficiency of the reservation system" and an online presence that caters to the needs of international clientele (that includes having an Instagram account) and an English website.
We wonder how many places were disqualified only because they didn't have a social media handle to provide.
The rest of the criteria include a curated wine list with selections from top winemakers, interior design and ambiance and "above all, no "pay-for-play" practices for the listed restaurants.
Knife and Nuri were the two Dallas steakhouses that made the list.
Nuri, which only opened eight months ago in Uptown, came in at No. 84 on the list. The Korean-Texan fusion is helmed by Michelin-recognized culinary director, Minji Kim from Seoul, and executive chef Mario Hernandez, whose background includes experience at prestigious restaurants, including Double Eagle Steakhouse and Gordon Ramsay North America.
A few menu items were particularly noteworthy for the steak ambassadors, like the Texas Akaushi HeartBrand Reserve steaks, Korean marinated short ribs and the Nuri Tasting Board, which they say "offers a curated selection of meats, including the aforementioned short ribs, filet mignon and other rotating cuts, accompanied by traditional Korean condiments and banchan," but it doesn't seem to be on the menu anymore.
Coming in at No. 47 on the list is Knife, helmed by chef John Tesar, whose restaurant Knife and Spoon in Florida earned a Michelin star and has also been nominated for a James Beard Award twice and has appeared on Top Chef.
They say Knife is "a place where dry-aged beef, culinary precision and Texan swagger converge to create one of the most compelling meat-centric experiences in Texas.
"The 45-day dry-aged 44 Farms sirloin remains a house favourite, while rarities such as 240-day bone-in ribeyes and Outpost 76 beef speak to the restaurant’s position at the cutting edge of American beef culture," continues the review on Knife.
More noteworthy items are the bacon tasting, beef cheek ravioli and the smoked short rib and bone marrow with oxtail marinade they claim reveal chef Tesar's range and finesse.
Knife and Nuri were among 19 concepts in the U.S. ranked and among three in Texas. The best-performing steakhouse in the U.S. is Cote in New York, ranking at No. 10 overall and Jeffrey's in Austin was the third Texas concept, which came in at No. 52.
