If you find yourself strolling down Main Street in Grand Prairie, you'll stumble upon a small but mighty shop slinging up fresh tacos and coffee. Mas Coffee Co. opened its standalone shop in the spring of 2023 after previously operating out of Zavala’s barbecue down the road.
When owner Christan Zavala decided to open her own business, she knew the coffee trade was at the top of her list. The name stemmed from Zavala’s Barbecue (owned by Christan’s husband, Joe Zavala), as staff would say “no mas” when food was sold out, meaning “no more” in Spanish. Christian took the term and dropped the “no” and kept the “mas” meaning “more coffee,” and with the help of Avoca Coffee Roasters, Mas Coffee Co. was born.
“I immediately reached out to Avoca Coffee Roasters in Fort Worth, which was always my favorite coffee shop. They helped me open the shop. They assessed the area, helped me select a machine and helped me start with the basic vanilla syrup,” Christan said.
While still using Avoca’s signature roasts today, Christan and her team make everything in-house. They started with only two syrups: mocha and vanilla. The mocha is made by adding real chocolate chips to the vanilla syrup and melting it all with espresso. Today, the selection has grown to seven-plus options, including a rotation of seasonal drinks such as hazelnut, coconut and pumpkin spice.
Syrups and coffee roasts are precisely measured to ensure precision in every cup: no guessing, no eyeballing.
“We do that because we want your drink to taste the same every single time,” Christan said.
In addition to the coffee, Christan knew she needed to have a food option to accompany the morning cup of joe. Tacos from Zavala's stuffed with their prized shredded brisket were a no-brainer. Fresh batches are transported from down the street every day.
“The tacos start every morning at 4:30. We make 100 every day. We pre-wrap them, so it's a quick service, but we've mastered the art of our assembly line,” she says.
The taco menu offers potato, egg and cheese, brisket, egg and cheese, plus a taco of the day, which you can find on Instagram. The space offers patrons a place to hang out and work, but to-go options are also available.
As Christan’s vision of Mas Coffee Co. expands, she hopes to make her way back to Zavala’s so both businesses can be housed in the same location. Her ultimate goal is to roast her own coffee beans and open more locations that capture a hometown coffee shop feel.
