Leading up to September’s Best of Dallas® 2016 issue, we’re sharing (in no particular order) our 100 Favorite Dishes, the Dallas entrées, appetizers and desserts that really stuck with us this year.
The list of ingredients is so ridiculous, there’s no way any mere human can say no to The Foundry, a “knife and fork” chicken biscuit at Chicken Scratch. Named after the rustic walk-up spot’s bar neighbor, the $11 dish is an embodiment of when Southern food goes over-the-top.
Golden, crispy fried chicken fingers cooked in cast-iron dutch ovens are sandwiched between two halves of a fresh biscuit and topped precariously with smoked bacon, mashed potatoes, beer mustard, American cheese and oregano vinegar honey. The resulting sandwich can survive only a bite or two before devolving into a delicious pile of comfort food, a tiny mound of Sunday supper with bacon thrown in for good measure. It may not be the most structurally sound of fried chicken sandwiches in Dallas, but that doesn’t stop it from being one of the best.
