Yesterday we told you about a new restaurant concept, started by Grant Achatz, proprietor of Alinea in Chicago. The concept riffs on dinner theater, charging a fixed price for a ticket before the event instead of leaving a bill after. The menu also shifts four times a year to keep the show fresh for return visitors. I asked if Dallas was ready for such a concept. Commenter kelly bishop chimed in with some thoughts of her own:
Chicago loves Grant Achatz (and rightfully so). For this concept to work anywhere I think it would take a Chef with enough talent, following, and respect to pull it off. You can’t just hand any Chef a concept and think they’ll be able to make it work.
This immediately prompts the question: Which Dallas chef has the mustard to pull this off? Anyone have any nominations?
