No. 63: Dungeness Crab Dip at Hibiscus

We’ve already written about another dish at Hibiscus for the Observer‘s 100 Favorite Dishes, but the Knox-Henderson protein palace serves up gem after gem, the Dungeness crab dip among them.

With this appetizer patrons honor Poseidon and eventually descend into a bacchanalia. The creamy mixture hidden under browned cheese contains visible of chunks of crustacean and is served with shards of unleavened bread — think matzo par excellence. At first bite, you and your dining companions will fall into a reverential silence, forgetting that you have several more courses coming. Then comes the ravishing, the trance, the ecstasy. Seriously, crab dip this astonishing is sacrosanct. Share the religious fervor. You will forsake all other crab dips because of the one at Hibiscus.
