Vandelay Hospitality has done an East Coast haunt boasting the “world’s coldest martinis” and best mac and cheese, Hudson House, a Chicago-inspired neighborhood restaurant serving cracker-thin crust pizza at DL Mack’s, and a glitzy and upbeat spot paying homage to Hollywood (Drake’s).
Now, the hospitality group is making a bold move and opening El Molino next week. This elevated and intimate Mexican concept hopes to be a destination in Dallas for elevated fajitas and rare tequilas.
The menu adds some creativity to Tex-Mex staples (fajitas and enchiladas) in a slightly upscale setting. Fun plates like fried-chicken tenderito fajitas are served along with classics like crab and shrimp enchiladas.

At the center of the drink menu is a flaming frozen margarita, which we’re sure will be blowing up our social media feeds soon. Following that on the bar menu is a skinny frozen margarita, a house margarita called “house rocks,” and a few other combinations that include a specific note for top-shelf tequila.
The $19 top-shelf spicy marg is made with Fortaleza Reposado. There will be mezcal, rare specialty tequilas and a feature for Maestro Dobel 50 Silver Oak, a limited-release tequila aged in Silver Oak Cabernet Sauvignon barrels.
Apart from the clear spirit, there will be cervezas, but no other offerings.
For food, they’re keeping it short and sweet with four sections: para la mesa (for the table), enchiladas, wood-fired fajitas and especiales. The fajita program is the focal point that features premium proteins, including filet mignon, grilled adobo chicken, fried chicken tenderitos, pineapple ribeye, and an interesting oyster mushroom medley, all paired with classic accompaniments and signature sauces.

Other standouts are Branzino Diamanté, crispy corn tempura, and the jumbo crab and shrimp enchiladas, which are noted as the chef’s favorite. All of this is served in a moody and sultry atmosphere inspired by Mexico City’s vibrant spirit and the refined elegance of French design.
The 2,500-square-foot space will be intimate but lively, seating 83 guests and 9 at a small bar.
El Molino will open at 6818 Snider Plaza on Tuesday, Oct. 14.
