The final restaurant opening inside the newly renovated Quad in Uptown Dallas has finally been announced. Mamani is the newest eatery added to the shopping center and will open early this summer.
Mamani is the third concept from brothers Brandon and Henry Cohanim, owners of sushi spot Namo and Bar Colette, which was a 2025 James Beard Finalist for Best New Bar just last month.
The two brothers have a knack for importing talent from across the U.S. and worldwide. Ruben Rolon – who runs the bar program at Bar Colette – is a Michelin-recognized bartender who came from L’Atelier De JoÁ«l Robuchon, South Florida’s first and only two-Michelin-starred restaurant. He’ll also be Mamani’s bar director.
The new restaurant has an equally impressive roster of talent, starting with the restaurant partner and executive chef Christophe De Lellis, who came to Dallas a little more than a year ago after a nine-year run at the JoÁ«l Robuchon restaurant in Las Vegas.
De Lellis’ early 20s up to today are filled with accolades across his studies in France, joining Michelin-starred and James Beard Award-winning restaurants, and opening others in Paris before moving to Vegas in 2010. At only 36, he describes Mamani as his dream project.
“Mamani” is named for the Cohanim brothers’ grandmother, a wonderful cook who was born and raised in Paris and instilled in them a reverence for great food and warm hospitality, a press release announced.
The restaurant will be a modern European concept blending French and Italian cooking.
“I’m French-Italian,” De Lillis explains in a release. “All four of my grandparents were from Italy, and I grew up cooking with my mom and grandma – more Italian food than French.”
Joining Chef De Lellis are his chef de cuisine Jon Culbert, director of operations Jonathan Bujanda, general manager Sueyoung Jo and wine director Allie Nault.
Culbert pivoted from nanoscale engineering to cooking and honed his craft around New York City. He most recently led the kitchen at Michelin-recommended Manhatta before arriving in Dallas.
Bujanda is bringing his wealth of fine dining experience from Alinea and Next in Chicago, and Michelin-starred Angler and Saison in San Francisco.
Jo’s expertise spans legendary establishments like Aureole and Eleven Madison Park, where she advanced to general manager.
Nault is said to be the youngest sommelier in America to work at a Michelin three-star establishment, the Inn at Little Washington Hotel. At just 21, she passed the Court of Master Sommeliers, Wine & Spirit Education Trust and Certified Specialist of Wine exams.
We all know and love Rolon for his creations at Bar Colette, so we’re thrilled to see what he’s created for Mamani. He won the Exceptional Cocktails Award from Michelin Miami in 2022, among other accolades in the Michelin realm, and he’s been a pivotal force in Dallas’ developing beverage scene.
“We have an all-star roster,” says Henry Cohanim. “What’s special about our team is that they’re coming here from all over, and really embracing Dallas. They’re excited to set a new level of hospitality for the city, one that feels appropriately warm and Southern.”
