Got a sweet tooth? Love breakfast? We’ve got a hot pink food truck you need to track down.
Alee Sanchez started A Sweet Bitee back in 2021. Her Hello Kitty-shaped mini pancakes bedazzled with a bevy of toppings are the main attraction these days, luring people from far and wide. The lines can get long.
“I love Hello Kitty, and the Hello Kitty pancakes were to die for,” says Mia Espinoza, a Hello Kitty fanatic. “The line was long but worth it in the end. My friends and I loved it, especially with the Nutella topping. I would 100% get it again.”
Customers start by choosing a size: 12 for $10, 24 for $20 or 36 for $30. The $20 option comes with four Hello Kitty mini pancakes.

Next, choose from a wide variety of toppings, syrups and fruits. Assorted cereals and add-ons like Fruity Pebbles, Cocoa Pebbles, Cinnamon Toast Crunch, Trix, Oreos, pecans, marshmallows and whipped cream liven up the flavors. Then, add maple syrup, caramel, condensed milk, strawberry jam or Nutella. All of that can be topped off with fresh strawberries or bananas.
Other staples on the menu are fresas con crema (strawberries and cream) for $8 and Abuelita brand Mexican-style hot chocolate for $5. When the lines get long, they sometimes pass out samples of the hot chocolate.
Recently, they added the ever-so-popular Dubai chocolate strawberries to the menu. Here, a cup of strawberries is topped with chocolate and pistachio cream and sprinkled with kataifi (a crispy phyllo pastry) for a crunch.
A Sweet Bitee is not new to sprucing up its menu. For Valentine’s Day, they used heart-shaped containers, and for Christmas, they switched out Hello Kitty’s pink bow for a green one and gave her a green nose. At Halloween, they made a green Hello Kitty Frankenstein.
When the weather warms up a bit, watch for a new menu of iced coffees.
The traveling food truck releases its schedule every week, which often includes Irving, Garland, Mesquite, Arlington and other communities around Dallas. A Sweet Bitee is typically accompanied by other food trucks. Their road partners often include Aggys Corn Car, which sells traditional elotes, loaded Cheetos and lemonade. Don Hotdog has Mexican-style hotdogs and tacos. Together, they give customers diverse menu options.
