    Beef's the star at this upscale eatery, but the kitchen staff thankfully strays into the dairy section of the food pyramid to do miraculous things with liberal doses of cheese. The manly menu includes a terrific appetizer of Romano-encrusted crisp-tender asparagus; bacon-wrapped shrimp crammed with cheddar; "that salad," featuring brandied cherries and crumbled Oregon blue; filthy rich scalloped potatoes and an unforgettable four-cheese lobster mac that pairs beautifully with a rib-eye or filet. Still, the restaurant's true to steakhouse traditions, treating its guests with kid-gloves care: Leftovers-if there are any-are sent home in black boxes closed with gold monogram seals.

Basic dishes are listed (red, yellow and green curries, sweet and sour sauce, fried rice and glass and rice noodles) with the option of including chicken, beef, pork, tofu, shrimp, squid, crab or scallop with one price for seafood options and a dollar less for the rest. The tofu pad Thai was bountiful, with noodles heaped high and peanuts and crisp vegetables on the side, and the spring rolls came steaming from the fryer and served with a light sweet and sour sauce.

    Founded in 1987 by the two Touris brothers, immigrants from Greece, there are now four Chubby's locations in the metroplex. The restaurant's name refers to what you would probably become if you became a regular, addicted to the Southern/Texan, Tex-Mex, and Greek delights served here. The regulars are legion and enjoy the cuisines presented through a classic diner prism, from traditional hearty breakfasts like the Ribeye Steak 'N Eggs served with hash browns or grits, toast or biscuits and cream gravy, to the Tex-Mex combo platters and gyro plate that mixes lamb and beef with a side of Greek salad and pita bread. As is to be expected, there are chicken-fried steak, meatloaf and fried fish dishes served alongside other tried-and-true greasy-spoon stars.

    Pity the band that competes for patrons' attention against the raucous games of darts, shuffleboard, pool, cards and shit-talking on a Saturday night at the Copper Spur Saloon--featured in "Dallas's Most Authentic Dive Bars". It's a tough crowd, but maybe they're just following the lead of owner Nell Scarborough, a stocky gray-haired woman whose quick movements belie her years. She watches over her customers like a mother whose children long ago stopped disappointing her and have since become a source of amusement. The place is hidden behind a Tejano club in a potholed parking lot across from Keller's on Northwest Highway. But there's no hiding the beer--cold, cheap and American--or the constant din of clinking bottles pounding against tabletops or shattering in trash cans. Of course, with happy hour prices including $3 wells till midnight on some nights, the harder stuff isn't an uncommon sight. It's the kind of place best enjoyed with a group of drinkers who realize that mechanical bulls are for tourists.

    Tom Fleming-late of some of the city's fanciest restaurants-decided to ditch the white tablecloth model for a simple café specializing in American diner classics. But simple isn't synonymous with easy: Nearly everything on the menu at Crossroads Diner is made in-house, including the greaseless, golden potato chips that show up with every sandwich order and the phenomenal corned beef that's brine-cured in the kitchen. And what Fleming can't make, he sources from the best producers: The list of suppliers on Crossroads' menu reads like an all-star roster of players in Dallas' local, fresh and seasonal movement. The sticky buns are especially popular.

If breakfast food isn’t your thing, this North Dallas Mexican restaurant is known for its tacos and other staples on the cheap, but note the place opens at 4 a.m. on the weekends. It was built to destroy hangovers one by one.

    Tony and Cindy Waldrop have been serving Tex-Mex to loyal customers since 1979. This location is expansive (though you wouldn't think so from the outside) with two floors and a patio. The latter is a favorite of the weekend crowd enamored with the 60-ounce margarita. But the name says it all. When at the colorfully decorated Enchilada's, order its namesake, especially on Wednesdays, when you can enjoy the Original Enchilada Dinner for only $4.79. Lunch combos don't break the 10-spot mark. With the exception of some of the fajita specials for two, most menu items aren't priced above $15. All of that, combined with the fact that readers of the Dallas Observer voted the restaurant's wait staff the best in Dallas in the newspaper's 2010 Best of Dallas issue, make it one of Big D's most stable Tex-Mex staples.
