These dishes are in no particular order. Some are little known, others celebrated. Some are pricey, others can be eaten on the cheap, but all are delicious to the extreme. One of the benefits of eating at any location of a restaurant chain is the comfort of consistency. That's why tourists in New York more often than not dine at the Applebee's or T.G.I Friday's in Times Square rather than at venturing forth to the nearby Churrascaria Plataforma, the all-you-can-eat Brazilian steakhouse wherein waiters whirl about the dinning rooms slicing prime cuts of beef, lamb, pork and chicken from the skewers on which they were grilled, or to other dining hot-spots in the five boroughs. The fanny-pack and visor set and teens on senior trips aren't clogging up Big Apple sidewalks for the exotic. Shopping at the Disney Store and riding the ferry to Lady Liberty is alien enough for their tastes.

But even here in what the cosmopolitans consider the provinces there are favorite chains, albeit patronized by covetous natives reluctant to share gems with outsiders. Fuzzy's Taco Shop, a chain with outposts dotting the metroplex and parts of Texas, is one such business. Fish tacos are their specialty, but they pale in comparison to the Original Nachos for one reason -- béchamel? Yes! Béchamel-smothered nachos at a Tex-Mex joint. To hell with the tacos; the tortillas are dry, anyway, and crack when folded! Give me a platter of the singular nachos piled high with shredded pork, beef or chicken, pico de gallo, queso fresco, then gloriously topped with the transcendental cream sauce.
