You can get tacos on what seems like every block in Dallas. There are full-service restaurants that serve tacos, taquerias that specialize in tacos, and even gas stations that serve tacos with cigarettes and a tank of gas. Most of these tacos come in beef, pork and chicken varieties, and if you look hard, you can find tacos made with goat and lamb.
There are even tacos made from insects available, if you know where to look for them. Luis Villalva opened El Come Taco in 2013 and was quick to push the taco envelope. First sesos appeared on his menu, for taco enthusiasts who craved calves brains in their double stacked tortillas.
Chapulines weren't too far behind. If you're new to grasshopper tacos, you owe it to yourself to give Villalva's version a try. The bugs are crunchy, salty and have a mild nutty flavor. With a little salsa they are delicious.
The livery flavor of escamoles is a little more challenging, but even if you don't find the prospect of eating ant eggs appealing, you should feel lucky that such an opportunity even exists here. Dallas has lots of taquerias, sure, but finding ones that bring something new to the table is a whole different matter.
