This category makes us hearken to our own salad days when Mom made the best damn chicken salad this side of the Ukraine. That is why we set the bar so high for this category and why we sampled way too much chicken salad. But in our quest for the best, we have come to one unalterable conclusion: It ain't just chicken and mayo no more. There's a whole bunch of stuff going on. The chicken is chunky as well as smooth, and it is mixed with apples, apricots, grapes, nuts, mushrooms, honey, eggs, tarragon, curry--more spices than you can pull off a rack. And although Two Sisters Catering Company gave Whole Foods a serious run for its money (yes, we also sampled Central Market), the simplicity and overall good taste of Whole Foods' "classic chicken salad" just hit too close to home for us to pass up.

A Dallas institution, Keller's offers a hamburger dining experience like none other. The drive-in joint, in all its tattered glory, conjures up Happy Days memories with a grown-up twist. On a recent weekday evening, a line of cars formed in the drive-thru, where six-packs of Coors Light were the item du jour. Oh, and its hamburger is pretty good, too. Cooked to order, the modest patty comes with pickles, tomatoes and onions on a lightly grilled sesame seed bun. The price is old-fashioned, too: just $2.05. Add 20 cents for cheese.

Gone are the days when fast-food fare was simply the likes of Burger King and Sonic. Right alongside them are restaurants that fall into the "quick casual" genre and whip out dishes with the same attention to speed offered by their more downscale culinary cousins. Enter Tin Star and Baja Fresh and Masala Wok, and you will find food that hurries as well as tastes good. Pei Wei Asian Diner, the P.F. Chang spin-off, gets our vote in this category. They do up rice bowls and noodle dishes right, offering them at modest prices and with enough haste to make dinner and a movie a reality instead of an ideal. Orange slices accompanying green iced tea, napkins thick enough to withstand the strain of a meal, an open kitchen and a sleek décor are the kinds of touches that make the capacity crowds here willing to slow down and actually chew their food.

The traditional South Indian, all-vegetarian restaurant offers a lunchtime buffet that stretches the width of the restaurant, with both sides of the long, heated serving table offering dishes to sample as you circle it. This industrial utopia offers standard buffet items such as fruit and vegetable salads, and the ethnic dishes are thoughtfully labeled. But, more important, the trays are always hot, fresh and filled with an array of vegetables, soups, nan and rice, with standards such as curried vegetables finding room along items such as a coconut and veggie salsa. In addition, a crepe filled with potatoes and peas is brought to the table in either spicy or regular versions.

There's just something about ordering a small pizza the size of a large child that gets us hot and bothered; better still if we're eating it alone (and we usually are, wah). This venerable establishment, which has been facing Bachman Lake since it was a puddle, feels like a slice of Manhattan in the middle of Northwest Dallas. The pies are enormous and juicy (dare not say greasy), served so hot and sloppy you need 10 napkins for just a slice--and a fork, too, unless you've brought a change of clothes, which we highly recommend. The pizza's available by the slice, but like the commercial says, you can't have just one. Close runners-up: Marco's in Preston Royal, various Campisi's locations and Sal's on Wycliff Avenue. Close, that is, but no calzone.
Maybe this place sounds like a happy hour hovel for the Pokémon set, a spot where udders serve as taps. But Milkbar is a take on the watering hole in A Clockwork Orange, which is why it has fake fir banquettes (they cause nasty hairballs), zebra-striped walls (they cause more dizziness than tequila shots), and mannequin limbs (they make terrible buffalo wings). So skip the interior and head straight for the roof, where you'll find the most imaginative rooftop patio in Dallas, with potted trees, a stone fountain, and ottomans for lounging around. Just don't spill your milk on the fabric.

The spring rolls at Green Papaya are like little pieces of heaven wrapped up in rice paper. Stuffed with vermicelli, lettuce and cilantro, these rolls come with your choice of shrimp, chicken or pork--known as goi cuon tom, goi cuon ga and goi cuon heo, respectively--and they're served with a dish of peanut sauce that makes these appetizers even more appetizing. This tiny restaurant on Oak Lawn Avenue does other dishes well, too. We suggest the flat noodles, the cabbage salad and anything made with the garlic sauce. Above all, don't forget the spring rolls. They're the perfect start to a near-perfect Vietnamese meal.

Sal's Pizza

It's the kind of neighborhood family spot you find all over the outer boroughs of New York: bright, bustling and filled with good smells and foreign, friendly waiters. In fact, Sal Jakova brought his family and recipes to this location (inevitably, a second Sal's is opening in Plano) from Queens 21 years ago. Some of the best pizza around, Neapolitan and Sicilian, bubbles in Sal's ovens to be sold by the slice as well as in pies of four sizes. The heroes are heroic, the calzones flaky and tongue-searing, the pastas more than passable, and the stromboli has, in previous years, been recognized in these pages as the city's best. The menu is rounded out by an ample selection of veal, chicken and seafood dishes. Sal's is also probably one of the safest places in town, because you'll almost always find cops eating here, testimony to the large portions and working-guy prices. Go on a Sunday night, when Sal's is presided over by colorful son Kenny, and you'll find a cross section of the community chowing down like straphangers.

Popeye's straight-from-the-can approach to spinach has nothing on Taj Express' creamed spinach, and neither does any other spinach dish we've tried. Almost always available on the buffet, this spinach creation isn't bitter or oily and is mixed with chunks of soft cheese. We prefer it slathered on Taj's warm nan. Fortunately for those who dare not like the steamed greens, the buffet is also stocked with rice and dishes such as fried potatoes, tandoor chicken, chickpeas in sauce and curried vegetables.

At the risk of never getting a table again, we'll impart our knowledge of a supreme lunch special. Monica Greene and her gang offer one of the most affordable lunches in town without skimping on flavor or quality ingredients. For a teensy $4.99, lunch patrons can have their pick of various enchiladas, Cha-Cha burritos, quesadillas, cheeseburger, Mexican lasagna (filling and flavorful) or, our favorite, Greene Pasta made with spinach jalapeño pasta. The portions aren't measly or humongous--just right for midday when there's still office work waiting. Monica's provides chips and salsa as well, so there's no leaving hungry. Even with a beverage and tip, the tab is still under 10 bucks.
