Chef John Tesar has been busy lately. He recently participated in the Food Network's new show, House of Knives, which premiered on March 18. He's also got his new-ish Italian restaurant, Knife Italian Steak, at The Ritz-Carlton Las Colinas.
And last year, he told us he had a vision for Michelin stars for his steakhouse concept at The Highland Dallas hotel, which involved renovating the space.
Today, the team at Knife released a statement that after more than a decade, the restaurant is closing and moving to a new location:
The Highland Dallas, Curio Collection by Hilton and Chef John Tesar and the Knife restaurant concept are concluding their partnership as of March 28, 2025. We are grateful for Chef Tesar’s partnership over the years and we wish him success in his future endeavors. - Lennox Capital PartnersThe statement for Tesar's team teases a new premier location that "aligns with John's long-term vision for the evolution of Knife."
The next chapter will bring an expanded version of Knife, including a more intimate and experiential Pocket Knife, as well as a new social concept, Switchblade — all under one roof.
James Beard-nominated Tesar has been a fixture in the Dallas dining scene since 2006, when he worked as executive chef at the Rosewood Mansion on Turtle Creek. He opened Knife in 2014; its a high-end steakhouse that has drawn praise for his dry-aging method using 44 Farms beef. Tesar's seafood and steakhouse, Knife and Spoon, at the Ritz-Carlton resort in Orlando earned a Michelin star in 2022. Over the years, he has appeared on several TV shows, including Extreme Chef.
