John Tesar Is Writing a Cookbook about Meat, and It Has a Chance to Be Great

John Tesar's new publisher, Flatiron Books out of New York, just announced they've purchased the publishing rights to his upcoming book. Knife: Modern Steak and All American Meats is due out in the spring of 2017. Josh Ozersky has been tapped to help Tesar with the writing. You may recognize...

John Tesar's new publisher, Flatiron Books out of New York, just announced they've purchased the publishing rights to his upcoming book. Knife: Modern Steak and All American Meats is due out in the spring of 2017.

Josh Ozersky has been tapped to help Tesar with the writing. You may recognize the food writer's name from the burger Tesar created in his honor at Knife. Ozersky is currently the food editor at Esquire. The book should at least read well.

Actually, the book will likely look great, too. Dallas' own Kevin Marple has been tasked with the photography. Over the years you've seen his work in every publication around Dallas, including here at the Observer.

Flatiron describes Knife as a celebration of American steak; an exploration into modern, self-sustaining Texas ranching; and a trip inside the mind of John Tesar. That last promise has to make the book worth it all on its own.
